Egg Sales in Tennessee: Requirements and Suggested Practices for Producers with Small Flocks

Summary
Local egg sales from small flocks are growing in Tennessee. This guide outlines federal rules that apply now that Tennessee’s Egg Law was repealed. Producers with fewer than 3,000 laying hens who raise and pack only their own eggs are exempt from many federal requirements, but must include “Safe Handling Instructions” on cartons. It also recommends food-safety practices—collect often, discard cracked eggs, use new cartons, label clearly, refrigerate, and clean/sanitize eggs and equipment correctly.
